The Climb
Engø Gård and Domaine de Châteauvieux are the early references in Le Lay’s formation, places that frame a kitchen vocabulary of precision, rhythm, and exacting standards. In 2011, the Sous Chef role at Søllerød Kro put Le Lay in a kitchen where detail and consistency are part of daily service. In 2012, the move to Executive Head Chef at Bar Strelka in Moscow, Russia shifted the work into a broader international setting, with the title itself marking a step from execution to overall kitchen leadership. By 2013, the Head Chef position at Pädaste in Estonia extended that movement through distinct culinary contexts. In 2015, Nimb Terrasse in Tivoli became the next post, and the progression from one kitchen to the next shows a career built through responsibility rather than acceleration for its own sake. That role placed him on both sides of the pass: shaping the work in the kitchen while also helping define the place itself. Later, as Former Food and Beverage Director at Park Lane Copenhagen, he moved beyond the line and into the wider structure of hospitality. À Terre, where Le Lay has been owner and Head Chef since 2019, brings the arc into sharper focus. The role shows what long practice can look like once it is tied to ownership: a chef working with accumulated judgment, not just title.
Today
Since 2025, Le Lay has held the Head Chef and Partner title at Restaurant Madeleine in Odense. The appointment fits a career defined by repeatable standards, leadership, and the ability to carry those standards across different houses.
