Old vines under one hand

The fruit reaches Mariano García as Tinto Fino, and his work as winemaker at Aalto Bodegas y Vinedos in Quintanilla de Arriba begins before the cellar receives it. The estate was founded in 1999 in Ribera del Duero, with García bringing the discipline of a long technical career at Vega Sicilia from 1968 to 1998 into a newer house built around old-vine parcels. His role here is practical: to read site, harvest, fermentation, barrel and blend until AALTO and AALTO PS carry the weight the house asks of them.

The vineyards run across several villages, with 110 ha of very old vines forming the core of the work. The house farms with organic methods and keeps the emphasis on Tinto Fino, the local name for Tempranillo, with a white wine, AALTO Blanco de Parcela, also in the portfolio. García’s lineage is not a tale of ceremony. It is time on the tools: annual harvest after annual harvest, cellar decisions repeated until judgment becomes a working habit.

A gravity cellar for Tinto Fino

The method here begins with restraint around the grape. Manual harvesting, organic viticulture and a gravity-flow winery set the terms before fermentation starts. The facilities are modern and partly underground, arranged so fruit can move through the building with less mechanical force. In a region where old vines can carry concentration quickly, that choice matters. It keeps the work close to selection, extraction and timing rather than force.

AALTO’s red program centers on still Ribera del Duero wines, especially AALTO and AALTO PS. The PS is drawn from Tinto Fino vines aged between 40 and 100 years, and the house ages it for 21 months in new French oak barrels. Elsewhere in the cellar, aging is stated as 16–21 months in new French oak, a range that gives structure without turning the barrel into the subject. The wine remains a question of fruit, site and García’s judgment at the blend.

The cellar road outside Quintanilla de Arriba

The estate sits outside Quintanilla de Arriba, reached by a 3 km dirt road from the main highway. The approach matters because it changes the pace before the tasting room does. Vines come first, then the low modern architecture, then the cellar route that follows the grapes through the building. The room is quiet and didactic rather than theatrical, built for people who want to see the sequence of the work.

Inside, the visit moves from production spaces into a seated tasting of AALTO and AALTO PS. The focus stays narrow. There is no need for a crowded table when the cellar has already shown its argument: old vines, careful movement, controlled élevage, and the hand of a winemaker whose career has been shaped by repetition. The bottle to leave in the mind is AALTO PS.
