At Aiolos Winery, within Aeolos SA, Lazarakis carries a role that sits close to trade as well as production: winemaker, wine reader, and manager of meaning in a small urban house. His own language for wine is direct. Nose and palate can locate places, winemakers, varieties, and philosophies. The cellar work, as far as the house presents it publicly, is not framed through a named mentor or inherited family bench. The lineage is instead Greek wine itself, joined to formal study and the long discipline of tasting with intent.

Aiolos Winery works in an urban warehouse environment in Paleo Faliro, within the Attikí appellation, where the cellar belongs to the city as much as to the wine map. That vocabulary is not vague. In a coastal suburb of Athens, those questions give Aiolos its discipline. The work does not need pastoral scenery to make its claim. It needs a bench, a cellar, and a taster willing to keep returning to the evidence in the wine.

The tasting room kept quiet

The room is professional and sophisticated, with a quiet register suited to private tasting rather than crowd noise. That restraint fits Lazarakis’s public way of speaking about wine. He does not separate the glass from the table; in his account, wine belongs with food as part of daily life, not as a ceremonial exception. The urban setting sharpens that point. Aiolos is not asking the visitor to read landscape first. It asks for attention at the glass.

In that atmosphere, the pass is replaced by the pour, the station by the tasting table, and the maker’s hand by the sequence of decisions that brought the wine there.
