Classical judgment at the edge of the lake

Other published dishes show the same hand at work across the menu. Crab meat is refreshed with Iseron vinegar and set against rice foam. An oven-baked potato carries truffle cream and seasonal truffle shavings. Veal from Ferme Guillaud is roasted, then smoked over cherry wood. The room keeps the work close. Large bay windows open toward Lac Saint-Félix, and the light changes the pace of the table without asking the kitchen to soften its precision. Raw wood tables, simple settings and a quiet floor give the service room the feeling of a family house that has learned formal timing. The address sits beside a private 25-hectare lake, which matters less as scenery than as tempo. Courses arrive against water, trees and silence, with the counterpoint of truffle, smoke, vinegar, poultry jus and fruit. The tasting menu format asks for trust, but the room does not press the point. It lets the pass do the persuading.
