A founder still at the still house

The ex-Kalash beer barrel is the hinge, a spent vessel asked to carry malt into a second register. At Bakery Hill Distillery in Melbourne, David Baker works as founder, the role he has held since 1999. That continuity gives the still house a fixed point. In whisky, where small decisions accumulate through mash, fermentation, distillation, wood and waiting, a founder who remains present keeps the line from breaking.

Baker established the operation in Kensington, Victoria, and the house has carried his name from the start. The record of the place is not a relay of head distillers or a sequence of imported signatures; it is one maker holding the direction over time. His known range reads that way. The Classic Single Malt keeps the malt identity direct. The Double Wood moves attention toward cask. The Peated Malt and Cask Strength Peated Malt push smoke and intensity forward. Sovereign Smoke takes that register further. None of those names requires explanation beyond the method they point toward: grain worked into spirit, then shaped by wood, strength and peat.

Beer wood brought back to whisky

Blunderbuss gives the clearest view of the current method because its finishing cask is the subject. The limited-edition single malt rests in ex-Kalash beer barrels, so the final stage places whisky inside timber already marked by beer. The gesture is simple and exacting. One liquid leaves the wood; another enters it. The barrel carries memory without becoming a novelty, and the whisky has to keep its own structure while taking on what the former beer vessel can give.

The release sits beside the beer that once occupied those barrels, linking two products through the same oak. That matters because the relationship is material, not decorative. Blunderbuss does not borrow a name and move on. It traces a passage through wood, from Kalash to malt spirit, and lets the vessel remain legible in the glass. For a distiller already associated with peated releases, the finish adds another register rather than replacing the house line. Smoke, malt, cask and beer residue meet at the bench-side point where a distiller decides when the wood has said enough.

Kensington work, held close

The still house belongs to Kensington before it belongs to any wider idea of Melbourne whisky. That distinction matters. Distilling can sound abstract from a distance, all categories and labels, but inside a working distillery the craft stays close to equipment, cuts, casks and the maker’s tolerance for repetition. Baker’s authorship gives Bakery Hill that scale: not anonymous production, but a house whose releases can be read back to the same hands that set the direction.

The room is best understood through the bottles the place has chosen to release. Classic malt, double wood, peat, cask strength peat, sovereign smoke, then Blunderbuss: a sequence of decisions rather than a single house note. The next measure is still the cask in front of Baker, and the most concrete one in view is Blunderbuss.
