The method at Bar Martínez depends on two tempos at once. Cold pintxos hold the counter: Charlota de calabacín rellena de crema de centollo, anchoas en vinagreta, pimiento relleno de bonito con salsa tártara, chatka, morro de bacalao con crema de marisco. Hot pieces move differently, ordered for the moment rather than taken from the line: bacalao frito, kokotxas de bacalao, gamba rebozada, brochetas of scallop and prawn, monkfish and langoustine, mushroom with prawn and bacon. The nine-meter counter makes that program visible from end to end.
Martínez keeps the house language within traditional Basque pintxos, but the work is not static. Frying, grilling, stuffing, vinaigrettes and purées all have to land at bar speed, with seafood handled for immediate eating and small plates read in a glance. The beverage side stays in the same register: local wine and beer, with bottles such as Ramón Bilbao Tinto Crianza, Pago de Carrovejas Crianza R.D., Enate 234 Chardonnay and Sardasol Rosado sitting beside the food rather than above it. The pairing is practical. Salt, vinegar, batter, crab cream, tuna and cod cheeks do not need a speech.

The counter is the station, the pass and the display, and the guest reads the craft at close range: platters set shoulder to shoulder, hot orders called through, glasses landing beside small plates, the surface replenished before it looks empty. It is lively because the work requires movement, not because the room has been staged to feel that way.
In the Parte Vieja, where pintxos bars make their case quickly, Bar Martínez holds attention through repetition. The same forms return, but each service asks for fresh judgment: when to fry, when to refill, when a plate has waited long enough, when the hand behind the counter needs to move faster or slow down.
