Beer carries the beverage program, with Paulaner at the center, which suits the food’s salt, fat, smoke and bread. This is not a cellar-led restaurant. It is a Bavarian kitchen with a beer pulse.
The room is light with wood and old Stammtische, rebuilt without sanding away the inn’s memory. Beim Sedlmayr sits near Viktualienmarkt and Marienplatz, close enough to the market’s movement that sausages, herbs and radishes feel less like theme than habit. The renovation that began in July 2024 took apart old bricks and put them back, shifted part of the kitchen toward the courtyard and gave the dining room more ease. The mood remains conversational, homey and direct. Plates move through a small, classic room, beer glasses gather on the tables, and the pass has the tempo of a place that knows the difference between rusticity and care.
Walter Sedlmayr opened the inn in February 1989, and that origin still gives the place part of its charge. Under Kuffler Group stewardship, the house keeps its cult-status tavern role while making room for the present kitchen. If the next measure is simply whether the old forms still hold, the answer is in the crackling on the roast pork at Beim Sedlmayr.
