Board work at cellar pace

The cellar decisions gather at the bench before they reach a label. Dirk Herdner, winemaker and Operations Manager at Bergsträsser Winzer eG in Heppenheim, keeps the cooperative’s technical work close to its growers. His role sits inside the Vorstand, the board structure that carries both production and organization for a house founded in 1904 as the Starkenburger Winzerverein by 21 winegrowers. Herdner was named to the board in 2023, a public marker of work that is otherwise measured in flow, timing, and whether fruit from many hands can arrive as one clear Bergstraße wine.

This is not the solitary cellar myth. Bergsträsser Winzer eG is a cooperative, and its scale changes the discipline. More than 300 winegrowing families, 322 in the house’s own count, farm about 224 hectares along the Bergstraße. The winemaker’s station therefore includes intake, consistency, sorting judgment, cellar order, and the patience to let regional style stay legible across a broad range. Herdner’s lineage here is institutional rather than personal: the predecessor is the cooperative model itself, built to preserve small family vineyards and make their work possible under one roof.

Riesling from sandstone terraces

The program leans on Riesling first, with Müller-Thurgau, Silvaner, Grauburgunder, Weißburgunder, Kerner, Scheurebe, Spätburgunder, and Dornfelder also part of the regional grammar. The vineyards sit in the Hessische Bergstraße, Germany’s smallest wine region, where warm exposures and yellow sandstone, Gelber Buntsandstein, shape the house’s account of place. The wines aim for fruit clarity, varietal typicity, and acidity held in balance rather than weight for its own sake. That is a technical choice as much as a stylistic one.

In the cellar, the stated method is a joining of traditional German Riesling craft with modern cellar technology. In a cooperative cellar, modern equipment is not a flourish. It is how fruit from steep, warm terraces and many growers keeps its line.

Wine and stone in the room

The public room is VINIVERSUM BERGSTRASSE, opened in 2014 for the cooperative’s 110th anniversary. Its design takes the regional phrase Wein und Stein literally, setting wine beside stone through a yellow sandstone façade that answers Heppenheim’s older architecture. Inside, the vinothek and exhibition space make the cellar’s collective structure visible without turning it into theater. Bottles stand for parcels, families, varieties, and the long agricultural habit of the Bergstraße.

The place also sits in conversation with the Wein und Stein trail, where geology and vineyard work meet outside the glass. For Herdner, that public face matters because the technical station behind it has to hold the same promise: Riesling that tastes of warm terraces, Spätburgunder kept to red-fruited ease, and PIWI wines that place ecological work inside the everyday range.
