Slate under the hands

Organic from vine to glass
The method begins outside, on steep Devonian slate sites including Lieser Niederberg and Lieser Schlossberg. The vineyards were converted to organic viticulture in 2007 under ECOVIN guidelines, a decision that changed the work before it changed the label. The rows are managed without chemical fertilizers, insecticides or pesticides; low-growing plants between the vines support beneficial insects and keep the vineyard alive as a system. In the cellar, Hubertushof works from the same conviction. The wines are vegan, with no animal products used for fining, and the house describes its approach as “Von der Rebe bis ins Glas 100% biologisch!” The fermentation is spontaneous, relying on yeasts already present on the grapes, and the wines mature in traditional cellars where old and new barrels both have a place. Riesling carries much of the Mosel argument here, from Kabinett to Spätlese and feinherb, but the estate does not reduce itself to one variety. Pinot Noir and Schwarzriesling can move into rosé, while Domina and Dornfelder give the red side of the cellar a darker register.
