    The choice is freshness before weight: Andre Bondar, winemaker at Bondar Wines in McLaren Vale, keeps the wines bright, fragrant, and mid-weight. His work here follows a line that began with a vintage gig in Oregon in 2001, then Adelaide University, then the cellar at Nepenthe in the Adelaide Hills from 2006. He rose there to senior winemaker before leaving in 2012, carrying forward the habits a cellar hand learns first: clean decisions, timing, patience, and the discipline of doing the unglamorous work properly. Bondar’s program draws on Shiraz, Grenache, Chardonnay, Cinsault, Mourvèdre, and Carignan, with still red, white, and rosé wines shaped in a small-scale cellar. The farming direction is organic, and Bondar has described the work in practical terms: “I am in the process of converting our vineyard to organic management and lots of new plantings of varieties that are late ripening and ideal for a warming region – cinsault, counoise, mataro, carignan, touriga and sagratino.” The point is not fashion. It is an adjustment made with the vineyard in mind, matching later-ripening varieties to the conditions he sees coming. Minimal intervention sits beside that choice, not as an excuse for vagueness, but as a way to keep the hand light once the fruit has done its work.

    The room at Bondar Wines is quiet by design, more cottage than showpiece, with the vineyard close enough to keep the work grounded in rows rather than theatre. Tastings happen in a relaxed family-run setting, and the scenery is part of the cadence: east-facing slopes, low texture underfoot, distant sea light, and the stillness that lets a glass show its edges. The wines carry that atmosphere without trying to copy it. Violet Hour, Rayner Grenache, Hope Springs Eternal, JUNTO GSM 2019, and Bondar Rosé mark the range of the cellar, from lifted fruit to more composed texture. Each sits inside Bondar’s stated belief that wine comes back to “the people who made it and the place where it was made.” At this address, that place is Rayner Vineyard.
