    On service, the sound rises quickly. The counter does much of the work, with beer pulled in sequence and plates crossing from the pass into a casual dining pattern. The room is energetic rather than hushed, closer to a working beer hall than a composed dining room. That suits the material. A beer such as Dead Pony Pale Ale is not waiting for ceremony; it wants a clean glass, a clear line, and a drinker close enough to the tap to notice the change when the next guest beer comes on.
