    Mantonegro before the cellar has a name

    Mantonegro from his grandfather’s estate came first, about 700 bottles before the old garage became Ca'n Verdura Viticultors in Binissalem. Tomeu Llabrés Gilet, winemaker here, had trained in Tarragona, then returned to Mallorca and worked alongside his father from 2008 at other island estates. Since 2010, he has made this his station, reading fruit, season, and vineyard character through the native grapes of Binissalem DO.

    The lineage is agricultural rather than ornamental. The family has cultivated vines across six generations, and Llabrés treats that inheritance as working ground: Mantonegro, Callet, Moll, and Giró Ros are not accents in the cellar, but the language of the place. Ca'n Verdura formally began in 2012, when production moved into a garage in the village centre. The decision set the scale and the tone. This is a small winery built around Mallorcan varieties, sustainable farming, organic conversion, and wines that keep the island’s centre in view.

    Small vats for native grapes

    The method follows the material closely. Reds work through maceration with gentle pumping over, including Son Agulló 2024, which spends 13 days on its skins. Stainless steel carries most fermentations where freshness is the point; barrel fermentation appears in whites such as Ca'n Xicatlà 2023, used for texture rather than display. Supernova Moll keeps to 100% Moll, while Supernova Negre 2023 is made from old-vine Mantonegro, drawn from vines described as 60 years old.

    The vineyards sit in the centre of Mallorca, with estate fruit from Llabrés’s grandfather’s land and small plots around Binissalem. Callet comes in part from Plà de Buc in Santa María, a 0.7-hectare vineyard planted in the early 1990s. Clay loam and loamy clay soils give the wines their frame. Production now sits at 50,000–150,000 bottles per year, still in the register of a hands-on cellar rather than an industrial facility.

    The cellar keeps the feel of its beginning. In the centre of Binissalem, the old garage does not separate the village from the work; it places the bench inside it. Tanks, barrels, cases, and glass sit with the practical closeness of a working room.

    There is no polished resort vocabulary here. The place belongs to the agricultural estates and historic vineyards around the town, to the possessions that shaped Mallorca’s wine country before the current language of tourism reached it. A tasting or vineyard visit is an encounter with that scale. The cellar’s attention returns, again and again, to Mantonegro, Moll, Callet, and Giró Ros.

    A Mallorcan vocabulary kept in use

    Ca'n Verdura matters because Llabrés has made a practical argument for native grapes at the bench, not from a distance. L'Origen, Ca Ses Rosetes Giró Ros DO Binissalem, Ca N'Antic, and Tomeu Llabrés Col.lecció carry that argument through different cuvées.
