i. Biography
The Path
Training in Tarragona gave Tomeu Llabrés Gilet a base, but the work that shaped his eye was closer to the vine. Back in Mallorca, he worked alongside his father and, from 2008, at other estates on the island, building his understanding parcel by parcel and season by season. The result was a craft formed through repetition, attention, and close reading of place. Since 2010, Tomeu Llabrés Gilet has been the winemaker of Ca'n Verdura Viticultors, and that role has defined the center of his practice. Over time, the daily demands of the winery have sharpened a style grounded in training and in long familiarity with the island’s vineyards.
The Work Today
At Ca'n Verdura Viticultors, the work is a direct response to fruit, season, and vineyard character. Since 2010, Tomeu Llabrés Gilet has used the winery as the place where those variables are translated into wine, with no separation between the raw material and the final decision. Manto Negro and Moll sit at the core of that practice. For Tomeu Llabrés Gilet, these native varieties are not secondary details; they are the working language of the cellar, through which he aims to make wines that read as Mallorcan and Binissalem in origin. That focus is less about style for its own sake than about fidelity to place. The wines are built to speak clearly of Mallorca, with the local grapes carrying the identity of the region rather than masking it.
Signature
L'Origen, Ca Ses Rosetes Giró Ros DO Binissalem, Ca N'Antic, and Tomeu Llabrés Col.lecció form the core of Tomeu Llabrés Gilet’s signature work. The names are linked by the same approach: native varieties, purposeful making, and a close relation to the terroir and traditions of this part of Mallorca. Taken together, these wines map a consistent method. They point to attention to nuance, to the character of each vineyard expression, and to a style that comes from working with confidence in a place known well.
Acclaim
The recognition around Tomeu Llabrés Gilet is regional and specific: a Binissalem-born winemaker working in Binissalem, with wines shaped through native Mallorcan varieties. His standing comes from that alignment of origin, practice, and result, with tradition treated as working ground rather than ornament.
