Cédric Grolet brought that discipline to Opéra after the long passage through Fauchon and Le Meurice, where the work sharpened around timing, structure, finish, and restraint. At Fauchon, he trained under Christophe Adam until 2011, learning a retail language in which a pastry has to hold its shape, its surface, and its promise under glass. He joined Le Meurice as a team member from 2011 to 2013, then became executive Pastry Chef there in 2013. The Opéra shop, opened in 2019, carries that hotel-bred precision into a stand-alone bakery and tea room beside the Opéra Garnier. It is not simply a second counter for familiar pieces. It is a separate station in the same house language: fruit, nut, flower, gloss, contour, and direct taste. Grolet’s stated measure is flavor, and the room gives that measure a public bench, with the line of viennoiserie and sculptural pâtisserie visible before the first bite.
The Opéra program works across two registers. One is the morning craft of croissant, pain au chocolat, apple turnover, cookie, rum baba, flan, and other familiar French bakery forms. The other is Grolet’s graphic vocabulary of fruit-shaped and flower-shaped pastries, where trompe l’oeil finish has to sit on a stable interior of ganache, financier, jelly, cream, praline, or meringue. Fleur Noisette concentrates hazelnut through praline, caramelized crisp, and salted ganache. Bouquet de Roses, made for Mother’s Day 2025, set vanilla financier with raspberry jelly, fresh raspberries, and raspberry ganache. Pavlova Mango Flower, Blackberry Flower Cake, Fleur Vanille, and the wider Fruits Sculptés line all ask the same question in different materials: how much visual exactitude can a pastry carry before the ingredient disappears. At Opéra, the answer depends on rotation and speed. The menu changes with the day, and sell-outs shape what reaches the counter. Croissants and pains au chocolat can vanish early; pistachio and pear have appeared on different days. The house does not treat repetition as sameness. It treats it as control.
The room is uncluttered, warm, and bright from large windows, with the counter doing much of the speaking. Golden viennoiseries sit in the front windows; finished pieces move like small constructions across the pass. Ceiling mirrors let guests watch preparation from above, turning the bench-side gesture into part of the room without making it theatre alone. The scale remains intimate, even when the crowd presses toward the pastry cases. There is a relaxed, festive charge to the place, sometimes with live music, but the work itself keeps a stricter rhythm: trays, tongs, cut surfaces, polished glaze, a box closed cleanly around a pastry that may have taken its cue from a hazelnut, a mango flower, or a blackberry.
Opéra sits between Grolet’s hotel pastry at Le Meurice and the later shops at The Berkeley, opened in 2022, and Singapore, opened in 2023. That spread matters because the method has to travel without losing its edge. The clean surface, the carved line, the fruit-like form, and the seasonal turn all return to the same bench question: whether the hand can make the piece legible before taste, then make taste justify the image.
