Parcel decisions under the Montagne Noire

Low yields and parcel selection set the first line of work for Stephanie Dondain, winemaker at Château Cabezac in Bize Minervois. She works an estate acquired in 1997 by her father, Gontran Dondain, then modernized with her help as the old winery was restructured into the cellar that carries the domaine now. The inheritance is practical before it is sentimental: vineyards to farm, fermentations to watch, a hotel-restaurant beside the wine estate, and a Minervois identity to keep legible in the glass.

Dondain trained at the University of Suze-la-Rousse in 2015, then held the sales and marketing direction at Château Cabezac until 2019. Since 2019, she has been owner and manager, with sustainable agriculture as the governing method rather than a decorative claim. The estate passed fully into her hands after Gontran died in early 2020, leaving her the 75-hectare vineyard and the responsibility for a family domaine rooted in the foothills of the Causse, beneath the Montagne Noire. Her signatures here include Cabezac Blanc and Alice, wines through which the house’s direction is most plainly read.

Fifteen to twenty days on the skins

The vineyard sits within the Minervois AOP, spread across five localities in Bize Minervois, Agel, and Ginestas. Recent river alluvium and a heavy deposit of pebbles give the soils drainage, which suits the estate’s low-yield red work. Syrah, Grenache, and Carignan form the central red blend, with Grenache Blanc and Macabeu part of the white program. The house also makes rosé, so the cellar has to hold more than one register of the appellation.

After harvest, the grapes are de-stemmed and crushed. Vinification and maceration run between 15 and 20 days, with gentle pumping over daily for a soft extraction. The method aims for roundness and fullness without pulling the wine out of its Minervois frame: spice and pepper, red fruit, rosemary, licorice, the garrigue notes that belong to this part of the Languedoc. The estate lists 11 fruity wines across its range, with 4 whites, 1 rosé, and 6 reds, but the discipline remains the same from the flagship red to Cabezac Blanc.

A cellar with vineyard light

The place reads as a working wine estate before it reads as a destination. The cellar sits with vineyard views and a sunny terrace nearby, while the hotel-restaurant across the way folds the domaine into a slower rhythm of tasting, eating, and returning to the rows. The noise stays conversational. In the tasting room, the useful details are not theatrical: a glass of Minervois Blanc, the line of the Montagne Noire beyond the vines, the sense that the wine program and the hospitality program share the same ground.

That setting matters because Cabezac does not separate the visitor from the work. Vineyard visits, cellar visits, oenology days, theme evenings, and occasional events all bring people back to the same source: a family-run estate, farmed sustainably, with a cellar shaped by Gontran Dondain and carried forward by Stephanie Dondain through Alice.
