    Dominique Moreau in Polisot

Dominique Moreau named her Polisot estate after her grandmother, Marie Courtin. Since 2005 she has built a small Côte des Bar Champagne project around biodynamically grown fruit and close attention to individual vineyard lots.

Pinot Noir from a single hillside

Much of the estate’s production comes from massale-selection Pinot Noir on a hillside with clay-limestone soils and Kimmeridgian bands. The holding is about 2.5 hectares. Moreau also works with other grapes in the range, so the composition of one cuvée should not be treated as a rule for every bottle.

    Cellar choices by cuvée

Her importer distinguishes Résonance, fermented in stainless steel, from Efflorescence, fermented and aged in used barrels. Both begin with parcel and harvest decisions, but the vessel and time before release change how each wine develops. Many bottlings emphasize one variety or year and low or no dosage; the precise mix and classification belong to the individual release.
