Champagne Piollot is a family grower estate in Polisot, in Champagne’s Côte des Bar. Roland Piollot, a fifth-generation winegrower, began bottling the family’s own Champagne in 1986. He works with his wife Dominique Moreau and their daughters Jeanne and Rose.
Vineyards and wines
The estate farms organically and biodynamically, retaining old vines propagated through massal selection. Its single-vineyard wines include Côme des Tallants (Pinot Noir), Champs Rayés (Chardonnay) and Colas Robin (Pinot Blanc).
In the cellar
Fermentation uses native yeasts. Most base wines age in steel tanks; some also spend time in barrels and foudres.
