    Taste before the harvest date

    The harvest date begins in the mouth. Aurélien Suenen, winemaker at Champagne Suenen in Cramant, works from taste first, then from the cellar decisions that follow. He has led the estate since 2009, after training at Avize, and his language for the job stays close to practice: “Common sense, reflection, observation, responsiveness, exchange.” The family presence in Cramant reaches back through Edmond, Georges, Marcel Suenen and Simone Stourbe, with the estate’s founding given as 1905 and the move from selling grapes toward making Champagne tied to 1924. Aurélien’s tenure belongs to the modern grower chapter: small parcels, Chardonnay, and a cellar method built to keep the Côte des Blancs legible. His own phrase for harvest is plain enough to set the discipline of the house: “The date of harvest is observation; it is taste. Only taste should guide us.” That sentence suits the estate. It puts decision before display, and the hand before the explanation.

    Seventeen parcels of Chardonnay

    The estate works about 3.2 hectares across 17 parcels, principally in the Grand Cru villages of Cramant, Chouilly and Oiry. The farming is organic, certified by Ecocert, and the material is Chardonnay on clay-limestone soils over chalk bedrock, with slopes given between 100 and 200 meters. Some parcels include vines more than 40 years old. In the cellar, the Suenen method keeps intervention low: no fining, no filtration, no cold stabilization. After pressing, the juice is settled and cooled; solids are racked before the first fermentation, which takes place in stainless-steel tanks. Fermentations rely largely on indigenous yeasts, and the wines go through full malolactic fermentation. The second fermentation works in bottle after the liqueur de tirage, with a fermentation period given as 6-8 weeks. Riddling moves the bottles toward sur pointes, and disgorgement uses a refrigerating solution at -27°C to freeze the deposit in the neck. The detail is technical, but the aim is direct: blanc de blancs with chalk, texture and cut.

    A quiet cellar for Grand Cru fruit

    The cellar at Champagne Suenen reads as a working place rather than a theatre for wine. The center is the sequence of press, tank, bottle, lees, riddling and disgorgement, all serving fruit from a small spread of Côte des Blancs parcels. Cramant gives the house its address and much of its register: chalk underfoot, Chardonnay in the glass, and a tasting room shaped around mineral blanc de blancs rather than ceremony. The atmosphere is quiet because the program asks for quiet. The estate does not need noise to explain itself; the work sits in the drawn line between vineyard observation and cellar restraint. Aurélien’s signature wine named here is MBDA, and the close of the house remains there, in Cramant Chardonnay shaped into MBDA.
