The brigade has been described as 15 chefs working for 80 covers, a ratio that shows why the details can hold across canapés, breads, cheese and petits fours. The cellar gives the room similar range, with around 300 selections drawn from a 700+ bottle cellar, and the wine pairing is part of the meal’s architecture rather than decoration.

The room sits below Parnell Square, not hidden so much as lowered out of the city’s traffic. Crisp modern decor, eye-catching art and a quiet floor give the service room to breathe. The pass can send out a sequence of canapés, bread matched to courses, lobster, pigeon, cheese and coffee without making the meal feel crowded. Staff keep the formal line, but the room stays warm and relaxed, a useful tension for a restaurant working at this level. Tableside Irish Coffee gives the final station back to the floor, where the drink is built in front of the guest with the same attention the kitchen gives to sauce and garnish. In a basement once associated with Dublin’s writers, the present craft is measured in reductions, pours and the last heat under Irish Coffee.
