    Since 2006, the cellar has carried a Bordeaux-trained eye into Provence rosé. At Château d'Esclans in Courthézon, winemaker Patrick Léon works as consultant to a house built around Grenache, Rolle, Cinsault, Mourvèdre, Syrah, Merlot and Tibouren in the Côtes de Provence. His formation began at Bordeaux University, then moved through the technical grammar of wine: oenology laboratory co-founder at the Gironde Chamber of Agriculture from 1967, technical director work from 1972, and group leadership at Mouton Rothschild Group. That history matters here because Château d'Esclans asks rosé to carry more structure than the easy poolside shorthand usually allows.

    Paul Chevalier, winemaker at Château d'Esclans, brings a different discipline to the same room. He trained at the University of Reims in Champagne, a region where acidity, pressure, and public clarity all have consequences.
