From toxicology to the cellar

The cellar decisions still begin with analysis. Elizabeth Vianna, winemaker at Chimney Rock Winery in Napa, works in Stags Leap District with estate Cabernet Sauvignon as the center of gravity. Her route into the station did not begin as romance. Vassar College and the University of California, Davis gave her the scientific foundation; New York Hospital-Cornell Medical Center gave her clinical toxicology, precision under consequence, and a habit of accountability before she entered wine.

At Chimney Rock, the apprenticeship happened inside the same house. Vianna came through the cellar as intern, became enologist from 1999, assistant winemaker from 2002, and winemaker from 2005. Since 2011, she has held the paired responsibilities of general manager and head winemaker, so the wine program and the estate’s direction sit in the same hands. That continuity matters here. Stags Leap District Cabernet asks for decisions that do not announce themselves at the bench: when to hold structure, when to protect lift, when to let the fruit carry its own weight.

Twenty eight vineyard blocks under one hand

The property gives Vianna a disciplined field of choices: a 119-acre estate, divided into 28 distinct vineyard blocks, with Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Sauvignon Blanc, and Sauvignon Gris in the program. The scale remains small for Napa, with annual production stated at 25,000-30,000 cases. That figure leaves room for separation, tasting, and adjustment without turning the cellar into a factory of sameness.

The house’s signature wines name the range of her work. Elevage Blanc leans toward brightness and lift; 2021 Stags Leap District Cabernet Sauvignon carries the depth expected from this appellation without needing ornament in the telling. The production philosophy is sustainable, with estate-grown focus, block-by-block attention, and the long run of Vianna’s tenure at the same winery. She has learned the site in sequence, through the intern’s task, the enologist’s measure, the assistant winemaker’s timing, and the head winemaker’s final call.

White gables over the vineyard

The winery’s Cape Dutch-style architecture gives the place a line before the glass reaches the table: bright white stucco, pronounced gables, and a silhouette drawn from South Africa’s Groot Constantia. It is a distinctive choice in Stags Leap District, where many estates lean into stone, barn, or lodge. Here, the house stands with a clean formal face against the vineyard blocks.

The room is quiet, the tasting mode seated, private, or vertical when the occasion calls for it. Outside, the estate atmosphere stays measured rather than theatrical; the vineyard, not the room, does most of the speaking. Inside that calm, Vianna’s work remains tied to names that can be followed in bottle: Elevage Blanc, the 2021 Stags Leap District Cabernet Sauvignon, and the 28 blocks around Chimney Rock.
