    Roast meats on a cookshop pass

    The duck is sliced to keep skin and flesh in one clean piece. Chop Chop Cook Shop in Bangkok works in a kitchen built for Thai-Chinese roast meats, noodles and the old cookshop grammar of the street outside. David Thompson created it. His interest in Thai cooking began with a trip to Bangkok in 1986, after which he learned the language and worked through rare recipes found in Thai funeral books, and the Michelin Guide has since carried the shop. Thompson is often at the stove himself, directing the line and carrying a Western precision into native flavours.

    The work here remains roast meat, broth, smoke, glaze, noodle and curd. The craft is in keeping those elements legible. An open kitchen matters for exactly that reason: this food loses force when it becomes too hidden, and slicing, wok heat, broth and assembly are part of the exchange between the bench and the table.

    A cookshop menu kept small

    The program looks back to Bangkok cook shops that thrived from the 1920s to the 1970s, family-run Chinese shophouse restaurants often staffed by Hainanese cooks and shaped by Teochew, Hakka, Hokkien, Thai and English colonial habits. Chop Chop Cook Shop opened in 2023 on the ground floor of a five-storey Art Deco building first put up by a goldsmith to display his wares. The menu keeps close to that inheritance rather than widening for its own sake.

    Roast duck carries five-spice, Chinese rose wine and longan honey; the plate adds pickled ginger, choy sum, peanuts and house sauce. The duck fried rice takes the same bird into the wok with chives, lime, cucumber and ginger. Noodle soups run through roast duck, bbq pork and crunchy beancurd. Jap chai brings braised greens, radish, mushroom and herbs into a vegetarian version of a dish usually built on pork belly. The small plates do not read as ornament. Prawn wafers, spring rolls, buttered prawns, crab cocktail, debal curried sausages and Chop Chop Mash all belong to the same method: roast, braise, fry, pound, smoke, serve while the work is still audible from the pass.

    The room is bright, not hushed. Colour sits high in the Art Deco shell, booths carry traditional Chinese characters, and the counter has the tempo of a retro diner rather than a formal dining room. It is a small house, and the scale is part of the argument: a few dishes cooked exactly, which is what a cookshop was for.

    Outside, Yaowarat keeps its own pace. Inside, Chop Chop Cook Shop narrows that noise into a smaller discipline: roast duck skin held crisp, bbq pork cut for sharing, soup carried hot to the room, ginger milk curd left to finish the meal without weight. Goldsmith Bar opened upstairs in May 2025, with a third-floor dining room planned above it, and the ground-floor craft still returns to the same plate of roast duck.
