Aged beef and the tableside cart

The room beside the 1929 golf course
The interior, designed by Champalimaud Design, takes its colors from the landscape: mossy greens and greys, warm wood floors in varied tones, sage green walls with gold accents, hand-rubbed antique brass lighting, deep wood millwork, buffed leather in blue and butterscotch, natural stone tabletops, and white oak and American walnut parquet in the main dining room. A microperforated ceiling finish keeps the acoustics low.
Big bay windows and a glassed-in veranda look out over the 1929 Colt & Alison golf course and Plantation #18, so the light changes through service while the pass keeps its own tempo. The tiled mosaic entrance floor sets the tone before the first plate arrives. Inside, the conversation stays quiet enough for the tableside work to matter, and a server building a Caesar at the table is not a performance so much as a method kept in the open.

The restaurant serves resort guests and club members, which frees it from chasing a wider audience and obliges it to be right twice a week for the same people.
