Chardonnay is the defining category here, and he works it with a preference for citrus-led fruit, clean edges, and no malolactic fermentation to soften the shape. The cellar language is not built around breadth. It is built around line.

De Wet holds both proprietor and winemaker responsibilities at the estate, so the house style is not something handed off between ownership and the bench. He studied at Bishops in Cape Town and at Geisenheim Institute of Viticulture and Oenology, a technical path that shows in the way the wines are framed: method first, expression close behind. His own reference point is the leaner style of the 1990s, a period he names when speaking about freshness and minerality. “But since winemakers make the wines they like to drink, I suspect we’ll move back to that fresh, minerally style even more in the coming years.” At De Wetshof, that is not a slogan for restraint. It is a working palate, carried through Chardonnay, Pinot Noir, Methode Cap Classique, and the estate’s named bottles, including The Site Chardonnay and Thibault Red Blend.

The estate works in Robertson, where limestone-rich vineyards sit in an amphitheatre landscape and Chardonnay carries the clearest house signature. De Wetshof is known as a pioneering Chardonnay house in South Africa, and the wines lean toward still white, sparkling, and still rose rather than a broad show of weight. The craft point is precision: acidity held bright, citrus fruit kept forward, and cellar choices made to leave the finish brisk rather than rounded.

That discipline suits the place. Limestone gives the work a natural subject, and De Wet’s cellar decisions keep returning to definition, tension, and freshness. The language around the wines is spare because the method is spare. Nothing asks for blur. The Site Chardonnay, in particular, gives a concrete name to that attention, a bottle through which the estate’s Robertson ground and De Wet’s preferred line can meet without excess ornament.

White buildings and a quiet cellar

The room around the work has its own restraint. Crisp white buildings stand against rose bushes, jacaranda trees, vineyard views, and the quieter register of an old estate that does not need to force atmosphere. The tasting room may lead into cave or private tastings, but the stronger impression is still the cellar’s discipline: a classic, elegant setting where the glass returns attention to acidity and fruit rather than decoration.

Outside, the Robertson vineyards hold the eye in long lines. Inside, the wines stay close to the hand that shaped them. The noise level is low, and that matters; it gives space for the cut of The Site Chardonnay to register.
