The sherry onion at the bar

A Gibson turns on the onion, and Meaghan Dorman, Bar Director at Dear Irving in Gramercy, New York City, has built the bar around that kind of detail. The house version uses a pickled sherry onion, a small decision with a long reach: brine against gin, sweetness against cold, garnish as part of the drink rather than decoration. Dorman came through Raines Law Room, where she has worked since 2009 and where she is Bar Director and partner. In 2014 her work expanded to Raines Law Room at the William and Dear Irving, and her remit now also includes Dear Irving on Broadway. The training named in her biography is Southern Connecticut State University; the rest of the education here is bench-side, in service, in the repeat work of a cocktail program that has to hold its shape across rooms, moods and orders.

A menu built in sections

The program at the original Gramercy bar sorts the list by use and appetite: Classic Inspiration, Hot Ones, Earth Elements and Nightcaps. That structure matters because the room is not a single-note cocktail den. It asks the back bar to move from a Gibson to spicy tequila and fruit juice mixtures, from whisky to late, quiet drinks, without making the guest read the whole cellar before choosing. Whiskey Business, Spicy Margarita and Butler Service sit among the signatures. There is also a large book of classic drinks, the kind of object that changes the rhythm of ordering; the guest can stay with the printed path or ask the server to pull something from memory. Glasgow Blend whisky appears among the selections. The bar’s place on The World’s 50 Best Bars list, at 26, belongs to Dear Irving as a house, but the daily proof is still colder and smaller: the stir, the shake, the dilution, the onion in the Gibson.

Rooms that change the temperature

The bar works through a sequence of vintage-inspired rooms rather than one continuous floor. The Marie Antoinette room is the clearest signal, but the whole place moves by atmosphere: dark lighting, lounge seating, booths that allow a conversation to stay at the table, music present without taking the bar away from the drink. The back bar has to serve both the guest who knows the classic they want and the guest reading by mood. That is where Dorman’s program shows its discipline. The bar gives the drink a setting, then lets the drink do the harder work.

The line continues downtown and uptown

Dear Irving did not remain a single room. Dorman’s work extends through Dear Irving on Broadway, and the wider group carries the same attention to cocktails into Dear Irving on Hudson, where the program adds sommelier-selected wines and beers to the mix. The original Gramercy address still has the clearest grammar: themed rooms, classic inspiration, and a house-pickled sherry onion waiting for the Gibson.
