Reading fruit before the cellar moves

A cool-climate program at scale

Wallace's signature set gives a clear reading of the program: Mt Baudin Chardonnay, Mt Mayson Syrah, Resolution Chardonnay, Resolution Pinot Noir and Sparkling Cuvee NV. Chardonnay appears in more than one expression, one part of the range carrying breadth, another built around resolution and line. Pinot Noir stays in the quieter cool-climate register. Syrah brings a firmer edge. Sparkling Cuvee NV adds lift to the same conversation about fruit, texture and balance. The house focus moves across still white, still red, sparkling and still rose, but the method remains plain in principle: read the site, respect the season, and let fruit carry intensity without excess.
