    Since 2013, the cellar choice has been restraint. Tyler Thomas, winemaker at Dierberg Vineyard in Santa Ynez, works from a rule he attributes to Aubert: "Aubert taught me to stay out of the way in winemaking." At this estate, that is not a slogan. It is a daily discipline of deciding when the fruit has already given the answer, and when the hands should do less.

    Thomas came to the bench with study behind him, first at Colorado State University and then at the University of California, Davis, before harvest work at Fiddlehead Cellars brought the academic frame into contact with weather, timing, and fruit arriving on its own terms. He later worked as Assistant Winemaker at HDV Wines in Napa until 2013, where patience and precision became part of the method. Since 2013 he has carried the cellar responsibility for Dierberg and Star Lane Vineyards, moving between Pinot Noir, Chardonnay, Cabernet Sauvignon, Merlot, and Cabernet Franc without treating them as the same problem in different skins.
