Stay out of the way

Since 2013, the cellar choice has been restraint. Tyler Thomas, winemaker at Dierberg Vineyard in Santa Ynez, works from a rule he attributes to Aubert: "Aubert taught me to stay out of the way in winemaking." At this estate, that is not a slogan. It is a daily discipline of deciding when the fruit has already given the answer, and when the hands should do less.

Thomas came to the bench with study behind him, first at Colorado State University and then at the University of California, Davis, before harvest work at Fiddlehead Cellars brought the academic frame into contact with weather, timing, and fruit arriving on its own terms. He later worked as Assistant Winemaker at HDV Wines in Napa until 2013, where patience and precision became part of the method. Since 2013 he has carried the cellar responsibility for Dierberg and Star Lane Vineyards, moving between Pinot Noir, Chardonnay, Cabernet Sauvignon, Merlot, and Cabernet Franc without treating them as the same problem in different skins.

Pinot Noir held without excess

The clearest fit for Thomas’s hand here is Pinot Noir and Chardonnay, the varieties most closely tied to Dierberg’s Sta. Rita Hills and Santa Maria Valley work. They ask for control, but not a heavy grip. The house also draws on Star Lane for Bordeaux varieties from Happy Canyon, where Cabernet Sauvignon and Merlot carry a different structure and demand a different reading of ripeness, tannin, and time.

Dierberg Vineyard is certified California Sustainable, a useful fact because the wines here are spoken through vineyard choices before they reach the cellar. The estate sits across an expansive 8,000-acre holding, with hillside vineyards, the largest caves on the Central Coast, and the Los Padres National Forest standing beyond the rows. Scale does not make the work abstract. In Thomas’s program, the method remains close to the fruit: watch the site, read the pick, keep the intervention quiet enough that Pinot Noir can show texture without weight and Chardonnay can keep tension without being stripped bare.

The caves and the patio

The room at Dierberg has the relaxed pace of a working estate rather than a staged salon. Outside, the patio looks toward vineyard slopes and forest line; inside, the modern barn shape keeps the tasting room open, sunlit, and close to the landscape that made the glass. The atmosphere is quiet enough for the small shifts in a flight to register, especially when Pinot Noir moves from red fruit to earth, or Chardonnay turns from weight to line.

The caves give the place its deeper rhythm. They pull the visitor away from the patio light and back toward the cellar logic of temperature, patience, and repetition. That contrast suits Thomas’s approach: the view may be broad, but the work narrows at the bench, where one lot, one pick, and one barrel can change the shape of Dierberg Estate Vineyard Pinot Noir.
