The estate itself dates to 1920, and his place in it is not abstract lineage: he is the son of Christian Amiot and Elisabeth Servelle, working inside a house whose name joins both family lines.

Antoine arrived with training in viticulture and oenology, an MSc in Wine Management from Burgundy School of Business, and experience in sake production in Japan. Those details matter because this is a small Burgundy estate, where management is not a desk apart from the rows. The work asks for decisions that travel from the vineyard to the cellar without much noise around them: when to intervene, when to wait, how to keep the fruit legible. The domaine’s stated philosophy is organic, and its scale, 8 hectares, keeps the hand close to each parcel.

Eight hectares in Chambolle-Musigny

Domaine Amiot-Servelle works within Chambolle-Musigny AOC, with Pinot Noir and Chardonnay in the program and still red wine as its central focus. The estate is described through flagship holdings in Charmes-Chambertin Grand Cru, Clos Saint-Denis Grand Cru, and Chambolle-Musigny 1er Cru Les Amoureuses, names that carry their own demands before any cellar choice begins. At this address, the vineyard list is already a discipline.

The winery uses gravity-fed systems, a practical choice that suits a house working at intimate scale. Rather than moving wine by force, the method lets movement answer to height, vessel, timing, and the patience of the cellar team. In Burgundy, that restraint is not decorative.
