The Peissy coteau faces southwest, a simple fact with consequences. Sun exposure, drainage, and air movement shape the choices available to Fischer and Tuor before fermentation begins. The estate works within AOC Genève, drawing its white, rosé, red, and sparkling wines from Geneva ground rather than from a wider buying net. Chasselas sits naturally in that context, with Gamay, Pinot Noir, and Merlot carrying the red side of the cellar.

The program is broad for a small family estate, but it stays close to place: still white, still rosé, still red, and bulles. The house describes a style built on elegance and balance, not weight. For Geneva, that is not a decorative phrase; cooler conditions around Lake Geneva can preserve freshness, while the Mandement slope gives fruit the exposure it needs to ripen.
