Field work before the cellar

The field work came first: François Carillon, winemaker at Domaine François Carillon in Puligny-Montrachet, learned the craft alongside his father and brother from 1988. That beginning matters here because the domaine’s authority is not built around a tasting room performance; it starts in vine work repeated season after season, in the village language of Puligny-Montrachet, and in the discipline required to keep White Burgundy precise without making it severe.

Domaine François Carillon was created in 2010, but the family line behind it reaches to 1520. François carries that inheritance as a working method rather than an ornament. The house is a small domaine of 16 hectares in the Côte de Beaune, centered on Chardonnay and the still white wines of Puligny-Montrachet AOC, with Bourgogne Chardonnay, Bourgogne Aligoté, Puligny-Montrachet and Chassagne Montrachet among the signatures. The role is present tense and practical: François leads the domaine, keeping the modern estate aligned with the older thread of the family and with the measured expectations of the village.

The program here is built on White Burgundy, with Chardonnay at the center and Aligoté and Pinot Noir also within the domaine’s range. The stated philosophy is sustainable, and the scale remains small enough that vineyard attention can stay close to the hand. In the glass, the wines are described in terms that point to freshness and structure: traditional and fine, racy, elegant, fruity, mineral-driven, with oak used carefully rather than as a foreground flavor.

That restraint is a technical position. Puligny-Montrachet does not reward blur. The work asks for a clear line from parcel to cellar, then from cellar to bottle, so that varietal character and place remain legible. François’s signature set maps that idea across village and neighboring expressions: Puligny-Montrachet for the center of the domaine’s language, Bourgogne Chardonnay and Bourgogne Aligoté for its broader register, Chassagne Montrachet for a nearby inflection. The oak stays a frame. The fruit, acidity and mineral line do the speaking.

The cellar keeps its voice low

The room is quiet in the way working cellars often are: not silent, but governed by the task at hand. Barrel tasting suits the place because it keeps the attention on formation rather than finish, on how texture, acidity and oak are settling before the wine is asked to stand complete. The atmosphere is refined without theatre, shaped by Puligny-Montrachet’s long habit of judging small differences.

Outside, the estate sits in the historic village, surrounded by its 16 hectares of Côte de Beaune vineyard ground. Inside, the cellar and tasting room keep the same register as the wines, intimate, classic, and exacting. Nothing here needs to be enlarged for effect.
