Since 1980, he has co-run the family estate from the village, with the vineyard as the main station and the property itself as the measure of the work. The house began in 1905, and its continuity is not treated as a label; it sits in the daily decisions around leaf, fruit, soil and timing.
Pascal’s role here is close to the ground. He looks after the vines, co-runs the estate, and keeps the work tied to Vinsobres rather than at a distance from it. The estate works sustainably across around 92–100 hectares, with parcels facing the pre-Alps and Mont Ventoux. The main varieties remain Rhône in their grammar: Syrah, Grenache, Mourvèdre, Cinsault, Marsanne and Roussanne. The lineage published by the house is family continuity rather than a named apprenticeship, and the hands are still at work here.
For Vinsobres Référence, the blend is stated with the kind of precision that belongs in the cellar: 50% Syrah, 40% Grenache and 10% Mourvèdre. The average vine age is 45 years. The soils are limestone clay, with clay-marl beneath and stones above, a structure that warms quickly and helps ripening in a place moderated by northerly and easterly winds.
The method begins outside. The estate uses early leaf thinning and green harvesting to reduce the crop, then harvests by hand, sorting at the vine before the fruit reaches the winery. The grapes are totally destemmed and partly crushed. Vatting runs for 25 days under controlled temperature, followed by malolactic fermentation in barrel. The barrel program divides the work into one-third new barrels, one-third one-year-old barrels and one-third two-year-old barrels, then gives the wine 12 months in air-conditioned cellars. Average yield is kept at 35 hl/ha, below the appellation maximum of 38 hl/ha.
The cellar at Domaine Jaume belongs to a small village rather than a spectacle. Vinsobres sits at the base of the French pre-Alps, with vineyard slopes around the estate and the tasting room close to the working cellar. Nothing in the setting asks to be made larger than it is. The pace is quiet, shaped by proximity to the vines and to the work behind the room. The room asks for attention to glass, not performance, and keeps that attention steady.

Vinsobres Altitude 420, Vinsobres Référence, Vinsobres Vinéa Nature and Référence Rouge all keep the estate’s focus on its own ground, with the appellation doing more work than ornament.
