    Paper-thin pasta, whipped robiola

    The signature lasagna works because the kitchen changes the architecture, not the premise. Paper-thin noodles are rolled into pinwheels and set with whipped robiola, giving the dish height, edges and browned surfaces without abandoning the red-sauce grammar that made it legible in the first place. It is a dish built for two, but its real scale is in the handwork: pasta cut cleanly, filling spread evenly, rosettes placed so the pan cooks as one piece. The same approach runs through the rest of the menu. Stuffed garlic flatbread keeps the comfort of garlic bread but moves the filling inside the dough. Chrysanthemum salad arrives under shaved Parmesan, using bitterness, salt and volume rather than excess dressing. Buffalo milk caramelle turns a filled pasta into a small wrapped gesture. Black cocoa tiramisu closes the meal in a darker register.

    Inside Don Angie, the room stays intimate enough for the pass to feel near even when the dining room is full. Blue-gray leather banquettes, bentwood chairs, a dark checkerboard floor, potted plants and a rustic brass bar give the restaurant its low, composed mood. The lighting is moody rather than theatrical. Conversation sits at a human level. Plates move through the room with the confidence of a place that knows which dishes people came for, and the food holds up under that attention. A lasagna built as a visual signature still has to cut cleanly. A salad piled high with Parmesan still has to eat as salad.
