Chef Leo builds Salta-region menus when the table asks for them, and adapts plates for infants and restricted diets. The chef’s hand is most visible when the occasion does not announce itself as difficult: a seasonal menu held together by pace, a plate that belongs to the setting, a service gesture that lets the room stay calm.
The grill, the farm, the wine
The program is traditional Argentine farm-to-table cooking, with asado as its central gesture. For longer stays the grill returns every three nights, giving the kitchen a rhythm rather than a single spectacle. Meat comes from the property’s grass-fed Aberdeen Angus, and the farm supplies much of the seasonal produce that shapes the rest of the menu. The work is direct: fire, timing, cuts brought out in sequence, salads kept fresh against the fat and smoke.
The asado can run to a dozen local meats, and a full service moves through pork, beef, pork ribs, blood sausage, chorizo and sweetbreads one after another, with the staff explaining cuts and temperatures as they go. Pacú, grilled llama, barbecued prawns, homemade dulce de leche ice cream, crepes and mate give the table its regional range. Natural light over the room
The room is quiet by design. It sits in the estancia’s main building, with hand-painted stencilled walls, light wood parquet, high white vaulted ceilings and furniture chosen for a house rather than a dining room. Natural light comes in cleanly, and the tables hold a view toward the mountains. The main hall keeps a roaring fire for a drink before dinner, with the sun going down over the Sierras.
Because the restaurant sits inside a working luxury estancia, the craft does not stop at the pass. The farm, the garden, the cellar tasting, the horseback ride and the meal all press on one another, and the dining room can be turned over to a gathering of sixty-five when the occasion calls for it. A guest may arrive for beef and leave remembering the sequence: smoke from the wood fire, salad beside the cut, Argentine wine in the glass, then dulce de leche at the end.
Two decades of the same idea
In 2025 the property marked its 20th anniversary, and the restaurant’s role in that span is plain. It gives the estancia a table through which the land can be read without explanation. The next service needs no new thesis, only the grill lit cleanly, the farm produce brought in at the right moment, and the asado held to the pace of El Colibri.
