Altitude sets the first decision

Sun, height, and family practice meet before the cellar work begins. Pancho Lavaque, winemaker at Finca Quara in Cafayate, works with vineyards set between 1,600 and 2,000m in the Calchaquí Valley, where the mountain light gives the fruit its daily terms. The Lavaque name carries more than a label here. Pancho has described himself as the fifth generation of winemakers in his family, and that sentence matters because Finca Quara is not a project built from distance. It sits inside a family-owned way of reading Cafayate, with the same winemaker also working at Bodega Lavaque in the valley.

His formal study at UC Davis School gives the work a technical frame, but the station asks for something more local than classroom precision. Cafayate requires calibration: when to trust the sun, when to protect freshness, when to let altitude do its part without turning it into a signature too loudly stated. Pancho’s role is to keep those decisions aligned across a place known for still whites and still reds, with the hands of the family still close to the method.

A cellar shaped by Cafayate fruit

The program at Finca Quara moves through Torrontés, Malbec, Tannat, Cabernet Sauvignon, Merlot, Syrah, and Bonarda, a spread that gives the cellar both aromatic lift and darker structure to manage. Torrontés belongs naturally to this valley, carrying the floral side of Cafayate when handled with restraint. Malbec and Tannat ask for a different discipline, particularly where sunlight and elevation can build weight quickly if the picking and cellar work lose their line.

The house works conventionally and at family scale, which places the emphasis on repeatable judgment rather than visible theatre. Pancho’s known signatures elsewhere, including Vallisto, LAVAQUE, and Félix Blend, point to a winemaker interested in continuity, not excess. At Finca Quara, that continuity is expressed through a portfolio made from valley varieties rather than a single showpiece. The craft is in keeping the wines legible as Cafayate: high-altitude fruit, clean still-wine form, and enough restraint to let the place carry the larger part of the sentence.

The room below the mountains

The tasting room looks out toward a quiet vineyard setting, with colonial architecture and the mountains close enough to feel like part of the cellar’s working equipment. This is not a loud house. The pace is slower, the surrounding air dry and open, the view marked by vines at the foot of the range. The place gives the wines a plain context: altitude above, stone and shade around the room, rows of fruit outside the door.

That atmosphere matters because Finca Quara’s strongest register is not display. It is the calm of a family winery working inside a valley it knows, with Pancho keeping the cellar connected to the same landscape that trained his predecessors. In the glass the terms stay simple: Torrontés, Malbec, Cafayate Valley.
