Pastor works in a house opened in 1996 in the Old Port by Sam Hayward, Dana Street, and Victor Leon, with Hayward’s founding discipline still legible in the room: local supply, simple cooking, and live fire used as structure rather than flourish. Hayward had already built a network of Maine growers through 22 Lincoln in Brunswick, and Fore Street gave that network a larger station, one built around ovens and flames rather than a sealed-off kitchen. Mussels go through the oven with roasted almond garlic butter; half chicken turns over fire; hanger steak, whole fish, foie gras, pork, halibut, monkfish, cod cheeks, and vegetables move through the same grammar of heat, smoke, fat, and timing. The restaurant serves à la carte and small plates, which matters less as format than as working rhythm, because the pass can bend around what is strongest that day. Fore Street’s kitchen does not treat seasonality as garnish. It writes with it. Sam Hayward’s original idea was not fusion or ornament, but classic food made from pristine ingredients, much of it sourced from Maine growers who had grown alongside the restaurant. That transparency was part of Hayward’s design, a way of making the cooking process visible without turning it into theatre. The energy stays conversational rather than hushed, with a rustic room shaped by flame, metal, bread, and the movement of the pass. Staff carry the organism forward, a word Dana Street has used for Fore Street, meaning a place altered by cooks, servers, reservationists, coordinators, farmers, and guests over time.
