i. Biography
Sam F. Hayward is the founding chef and co-owner of Fore Street in Portland, Maine, where he has been described as owner and executive chef. Fore Street opened in 1996, and Hayward’s work there has centered on local Maine ingredients and sustainability; he won the James Beard Foundation’s Best Chef Northeast award in 2004 and the Chef’s Collaborative Sustainer of the Year award in 2011.
