    Clean lines at a dark pass

    The cooking stays pared back at Gilt Bar in Chicago, where comfort food moves through a dim room with the pace of a practiced station. The restaurant opened at 230 W. Kinzie Street in February 2010 as Brendan Sodikoff’s debut, in a River North space so often unlucky that the trade called it snake-bitten, after Havana, Aigre Doux and Pili Pili had each come and gone. He had been scouting locations for six or seven years before taking it, and launched in the middle of a recession.

    Sodikoff’s formation explains the register: four years at Thomas Keller’s The French Laundry, study at the Ritz, time with Alain Ducasse, and a recipe-development role at Lettuce Entertain You. A farmer named Woesle, who grew vegetables and raised chickens, taught him what he described as magic in flavour and beauty, and that shaped the sourcing. Rich Melman gave him the commercial half of the equation. The result is a kitchen built less around display than concentration, a place where fried chicken, beef cheek pot pie and Truffle Mafaldine can sit together without the menu losing its nerve. Two months were spent perfecting the fries by testing every variable, which is the clearest single measure of the house method.

    Comfort food with a narrow focus

    The kitchen’s method is visible in the way the signatures gather around appetite and control. Steak tartare carries a slow-cooked egg yolk. Bone marrow takes red onion jam. Ricotta gnocchi comes with wild mushrooms, while the Truffle Mafaldine gives the pasta program its most direct statement of pleasure. These are not small gestures, but they depend on balance: fat cut with acidity, softness given edge, sauce held close enough to the noodle that the dish does not blur.

    Gilt Bar works in an à la carte and small-plates format, so the pass has to keep several tempos at once. Fried chicken with mashed potatoes asks for a different kind of timing than a Double-Cut Ribeye, and both have to meet pastas that rely on texture before abundance. The approach is contemporary American comfort, with an Italian thread in the bench work, and the best dishes feel as if the kitchen has chosen its lane and stayed there. The house was built to attract both foodies and scenesters without falling back on safe bets, which is why the menu carries no burger.

    The room around the bench

    The front bar sets the first rhythm. Glassware moves under low light, beer and cocktails carrying their own part of the program, while the room keeps its conversation at a human level. Gilt Bar’s polish is not brittle; the leather, the dark wood, and the glint of metal give the room a speakeasy cast without turning the meal into theater. The back feels more private, almost nostalgic, and the downstairs Library lowers the register again.

    That atmosphere changes how the food reads. A plate of bone marrow with red onion jam can feel heavy in a brighter room; here it belongs to the grain of the place. The same is true of the fried chicken and mashed potatoes, which lean into comfort without giving up finish. The station has to answer both sides of the house: the lively bar and the quieter tables. The dish that holds that tension best is the Truffle Mafaldine.
