From service pace to a basement bar

Service came first, before the bar rail: a fish and chip shop, then repeated nights reading rooms. Alastair Burgess, founder of Happiness Forgets in London, carries that training into a Hoxton basement where the work stays close to the guest. His record starts in the practical end of hospitality, then moves through Guildford, Birmingham, London from 2002, New York, Quo Vadis, and a food and beverage manager post before he began setting the terms of his own rooms. Happiness Forgets opened in 2010, with Original Sin and Petit Pois following as part of the same operating instinct: cocktail bars and French food, kept accessible without letting the room go slack. Burgess has described a long apprenticeship in plain terms, beginning when he was 16 and moving into bar work at 18. That matters here because the bar does not feel built around display. It feels built around the practiced sequence of greeting, listening, mixing, adjusting, and sending the drink when it is ready.

A short list, a longer discipline

The drinks program at Happiness Forgets works from restraint rather than volume. The list stays compact, usually around 12-20 drinks, and the point is not a large back bar performance or a catalogue of rare bottles. The method depends on balance, bartender judgment, and the ability to move between originals that hold their shape and classics made without fuss. Two Barrels and Louis Balfour sit among the signatures, while the off-menu conversation is part of the craft: a guest gives a direction, such as whiskey, smoke, and less sweetness, and the bartender builds from there. The Louis Balfour carries that smoky whiskey profile. London Calling puts gin, lemon, sugar syrup, orange bitters, and dry sherry into a sour with a Seville-Jerez line. A Japanese Tom Collins variation has used yuzu sake, grapefruit, gin, lemon, sugar syrup, and soda. None of this asks for theatre. The work is in the cut of acid, the weight of sugar, the way a drink lands cleanly rather than loudly.

Low light at the bar

The room keeps the scale tight: red brick, candlelight, low-level lighting, and a basement address that pulls attention back to the bar instead of the street. Conversation can hold. Staff move with the familiarity of people who know when to guide and when to step away, and the back bar supports invention without turning the exchange into a lesson. In a hidden room like this, hospitality shows in small decisions: cucumber-infused water on the counter, a classic adjusted when fruit runs short, a guest moved from a basic go-to toward something more precise. Burgess now assists sporadically, leaving space for the team’s own hands inside the program. At the Louis Balfour: smoke, whiskey, and a drink made from a preference rather than a script.
