    Vegetables set the first decision at the pass. Hélène Darroze was executive chef at Villa La Coste in Le Puy-Sainte-Réparade from July 2021 until late 2025, inside a kitchen where Provençal produce carried the menu before garnish or theatre. A native of Landes, she had already helmed Marsan in Paris and The Connaught in London, and she brought a philosophy of emotional, sincere cooking rooted in Provençal seasonality. The restaurant opened here in July 2021 as the gastronomic table of Villa La Coste, on the Château La Coste domaine, and earned a Michelin star in March 2022; the star went with the chef when the collaboration ended. Its brief was clear from the beginning: let the season speak in a Provençal register, with the vegetable treated as a central material rather than a side note.

    A tasting menu led by the garden

    The program here has been built around a tasting menu and a seasonal kitchen, with local sourcing as the spine. Service stays formal without turning stiff, and the view pulls the table back toward the estate: vines, stone, terraces, and the contemporary works that have made Château La Coste more than a hotel address. Villa La Coste itself belongs to that larger composition, a 5-star house with 31 suites, 10 of them with private pools, set between Aix-en-Provence and the Luberon natural park. None of that replaces the work on the bench. It frames it. The kitchen has to cook with enough restraint to belong to the landscape, and enough conviction to hold its own against the architecture outside the glass. In that setting, a carrot from Bruno Cayron can carry more weight than ornament.

    A handover already in motion

    The restaurant’s next chapter is no longer abstract. The collaboration that gave the table this name ended in late 2025, announced to the teams on 29 October, and the house returned to the name Louison under Florent Pietravalle on 6 March 2026. Pietravalle is a Montpellier native who came from La Mirande in Avignon, with a pedigree through Joël Robuchon, Jean-Luc Rabanel and Pierre Gagnaire, and his stated register is a cuisine du vivant. That change matters because it keeps the estate’s central question in view: how a kitchen inside a vineyard, art park, and hotel continues to cook from the living ground around it.
