He served as Head Chef at the Spanish Embassy in Mexico, then worked as a cook at Biko in Mexico City from 2007 to 2017. That span gives the present station its weight. Bellver uses the local larder without letting it soften the Mexican register. Red prawn aguachile brings chile and jalapeño to the sweetness of the shellfish. Sea lentils take shrimp broth. Soft-shell Delta blue crab can appear in a taco or tetela, a gesture that depends as much on sourcing as on folding. In October, mushrooms have carried the season through chochoyotas and grilled black trompette. The beverage program follows that same line of appetite, with cocktails, mezcal-based pairings and a curated wine program moving alongside the heat, smoke and salt.
The room keeps the work near the guest without turning the kitchen into theatre. Rustic wooden tables, Mexican decoration and low, comfortable light make the space feel lived in rather than staged. The atmosphere is relaxed, elegant and warm, with a conversational sound level that suits small plates and staff explanations of each course. Bar stools give a view of the team at work, and that bench-side proximity fits Bellver’s cooking: the plate may carry distance, but the service keeps it close.
Jiribilla sits by Sant Antoni market, and that geography matters more than any broad claim about fusion. The restaurant’s best argument is made in sequence, a tortilla folded, an aguachile sharpened, a chochoyota set beside grilled mushrooms. Bellver’s present work remains anchored in that exchange between Barcelona produce and Mexican method, held at the pass in Chochoyota con setas.
