The corned beef lands high on rye under Chef Ziggy Gruber at Kenny & Ziggy’s New York Delicatessen in Galleria, Houston, the cut and stack treated as memory work, not ornament. Gruber’s station here carries both formal training and counter training: Le Cordon Bleu London, kitchens at Le Gavroche and The Waterside Inn, then the family deli trade that came through Cresthill Kosher Deli in Spring Valley, New York, where he ran the place with his father until 1990. Since 1999, Kenny & Ziggy’s has been the Houston vessel for that practice.
The lineage begins before Houston. Max Gruber worked in New York delis and helped open The Rialto Deli on Broadway in 1927. Eugene Gruber, Ziggy’s father, worked the counter young and later opened Genard’s on Madison Avenue with Seymour before Cresthill. Ziggy learned the trade at age 8 under Max, Eugene, uncle Sy, and cousin Norman, absorbing a deli education measured in slicing, catering, and the rhythm of a counter. His own sentence for the work is plain: “Kenny & Ziggy’s isn't just about food. It’s about tradition.”
The menu is built the long way, with over 400 items and a deli grammar that runs from breakfast to dinner without treating the classics as museum pieces. Corned beef, pastrami, Reuben, chopped liver, Hungarian stuffed cabbage, chicken matzo ball soup, blintzes, potato pancakes, omelets, cheesecake, butter cookies, rainbow cookies, cakes, and pies all sit inside the same program. The in-house bakery matters because the deli form is not only meat between bread. It is the whole table.
Gruber’s approach at the pass is continuity before invention. The sandwiches are described for height because height is part of the method: mile-high corned beef and pastrami, generous Reubens, triple-deckers with corned beef, turkey, Russian dressing, and coleslaw. Pickles arrive as part of the language. The restaurant has also grown its dinner reach with fresh fish and salads, but the center of gravity remains cured meat, rye, soup, cabbage, pancakes, and the bakery case. National Deli Month, which Gruber co-founded in 2016, extends the same preservation work beyond this room.
The room has the density of a working deli rather than a staged one: celebrity photographs, playbills, display cases, meats, desserts, and tables set close enough for the noise to stay conversational. The counter does not ask the room to be hushed. Plates move large, sandwiches arrive stacked, and the eye travels from pastrami to pastry without leaving the line of service.
Houston changed around the deli, and the deli changed Houston’s sense of what this kind of place could be. At first, Gruber served many New Yorkers and Jewish Houstonians who already knew the references; over time, locals learned the shape of kreplach, kishka, stuffed cabbage, and matzo ball soup by ordering them. The continuity now has another layer, with Gruber’s daughters Max and Izzy tied to a fourth generation. Kenny & Ziggy’s serves rye, corned beef, pastrami, and the Kenny & Ziggy’s pickle bowl.
