Régis Dho’s contemporary design gives the dining room a clearer frame, with curated lighting that changes through the meal and keeps the table in focus. There is a covered terrace, a garden, a cocktail bar, and PH3, the bistro opened in 2009, but the gastronomic room remains the center of the composition. Service is formal in the old French sense: paced, attentive, and built around the plate. The address still belongs to Vienne, near the Roman obelisk that gave the restaurant its name, and to the Nationale 7, the road that once carried cooks, travelers, and appetite toward the Riviera. The Filet de Rouget Barbet and Gâteau Marjolaine still carry the house’s long method.
