Fruit held to the line

Cabernet Sauvignon and Shiraz set the terms before the cellar work begins. Greg Follett, winemaker at Lake Breeze Wines in Langhorne Creek, keeps that work close to the fruit, with style, continuity, and place held together in the bottle. His station is not described through spectacle. It sits in the practical decisions of a working winery: when to preserve lift, when to give a red more frame, when to let the vineyard carry the shape of the wine without crowding it.

Follett’s role at Lake Breeze is a hands-on one, tied to winegrowing translated into bottle rather than to a distant cellar signature. The estate is family-owned over 130 years, and that length of ownership gives the work a particular pressure. Continuity has to be made fresh each vintage, not merely inherited. Follett also serves as chair of the RA&HS Wine Committee, a public role in the wider trade, but the useful reading of his work remains at the estate: Bernoota, Arthur's Reserve, Winemaker's Selection Shiraz, and Bullant carry the clearest outline of his cellar decisions.

A portfolio cut from Langhorne Creek

The program at Lake Breeze moves through Cabernet Sauvignon, Shiraz, Malbec, Chardonnay, Pecorino, and Nero d’Avola, with still red and still white wines setting the main frame. That spread matters because Langhorne Creek asks for judgment across weight, freshness, and line. A red can take breadth here, but breadth without control becomes blunt. Follett’s task is to keep the fruit articulate.

The winery works at boutique scale, and the estate’s public identity rests on conventional winemaking rather than a declared alternative method. That leaves the attention on picking, extraction, maturation, and blending, the ordinary verbs that decide whether a wine holds its place. Best Value Winery of the Year in 2022 sits among Follett’s recognitions, alongside the Max Schubert Trophy, Best Red trophy, and Producer of the Year. Awards do not make the wines, but they do mark repeated trade attention to the Lake Breeze style.

The cellar door looks back to the gums

The modern limestone cellar door gives the tasting room a clean, pale edge, with the Barrel Room looking toward ancient river red gums and vineyard rows. The setting is quiet enough for the glass to stay central. In the restaurant, the room is bright and airy, with a terrace balcony opened toward the same vineyard view, so the hospitality does not have to import atmosphere from elsewhere.

That sense of proximity suits the work. The cellar, the tasting room, and the vines remain within sight of one another, and the place reads as a working estate before it reads as a scenic stop. A visitor meets the wines through Cabernet, Shiraz, Malbec, Chardonnay, Pecorino, or Nero d’Avola, but the through line is Follett’s discipline with Langhorne Creek fruit. The concrete noun on the glass is Bullant.
