The earlier foundation was set by Laurent Petit, whose meat-free, lake-centered cooking brought the place into Michelin recognition. The present kitchen keeps the lacustre and vegetal grammar close to the property: fish from Annecy, Bourget and Léman, produce from the potager, and local growers working within 100 km. That is the real station here. The pass is not built around abundance; it is built around restraint, sourcing and the confidence to let water, leaves and smoke carry the line.
Garum, maturation and the garden radius
The method at Le Clos des Sens begins before service, in the garden and in the handling of fish. The kitchen works from 1500 m² of permaculture-managed potagers, aromatics and fruit trees, with rainwater collection and waste recycling folded into the daily rhythm. Féra can arrive raw with garum, its depth coming from fermentation rather than sauce. Brochet can be matured and grilled with the treatment usually reserved for meat. Pike may appear as mousse, chip or smoked flesh, each texture pulling a different note from the same fish. The tasting format moves through lacustrine and vegetal forms: mushrooms handled raw, cooked, powdered and crisped; chicory pushed toward bitterness and sweetness; herbs appearing as punctuation rather than garnish. During fishing closures, the house may adjust the frame, but the discipline remains seasonal rather than concessive. The wine program follows the same alpine axis, with regional bottles and vegetable juices, bouillons and infusions allowed to stand beside wine as working pairings, not substitutions.

The room is quiet in the way a serious pass needs quiet. Natural materials, mocha and burnt wood tones, an open kitchen and wide lake views keep the eye moving between bench and landscape. There are 30 seats, enough for the brigade to hold a formal tasting menu without turning the service into theatre. The terrace sits under centenarian chestnut trees, facing the lake and the Bauges Mountains, so the view is present but not asked to do the cooking’s work.
Inside, the atmosphere is contemporary and serene rather than ornamental. The house has rooms, a heated outdoor pool and a summer Cortil space outside the restaurant’s main sequence, but the restaurant’s center is the pass and its measured exchange with the garden.
