    Local seafood through a Washington hand

    The cuttlefish arrives as noodles, folded with stracciatella and honey vinaigrette. Little Bear in Ho Chi Minh City is co-owned and run by two young chefs, Duy Nguyen and Truong Hiep, who work a modern Vietnamese register drawn from childhood memory, wet-market flavour and the casual quán nhậu habit of eating and drinking together. The name came from a nickname given to Duy Nguyen at twenty by his then sous chef, and it has since become the identity of the room.

    The restaurant sits at 36 Nguyen Ba Huan Street in Thao Dien, in a neighbourhood where the table can carry raw shrimp, cockles, pomfret, clams, morning glory, mustard leaves and natural wine without asking any one tradition to behave too politely. Play sits inside structure here: Vietnamese in foundation, contemporary in method, direct in its handling of seafood. The house holds Michelin Selected recognition and a Michelin Young Chef Award, the latter making Duy Nguyen the youngest recipient of it anywhere, and both attached to this address rather than borrowed from another room.

    Scratch work for a small-plates table

    The program moves between à la carte plates and a five-course set meal, with small, medium, and large dishes doing different kinds of work across the table. Cuttlefish Noodle with Stracciatella, Shrimp Tartare with Mustard Leaves, Cockle Lemongrass Beurre Blanc, and Tagliolini with Marinated Clams give the kitchen its clearest vocabulary: raw seafood, acid, dairy, herbs, shellfish depth, and pasta craft held close to Vietnamese memory. The house makes elements such as cheese and noodles in-house, a small but telling choice for a restaurant that could have leaned on novelty and did not.

    The measurements here come through format as much as recipe. The menu runs to around 20 dishes, and the set menu runs five courses; that span lets one table eat lightly at the counter while another works through a fuller pass. The wine program follows the same intent, with natural, organic, and biodynamic bottles chosen for food rather than display. Low-intervention wine can turn cloudy or sour in the wrong hands. Beside lemongrass beurre blanc, marinated clams, mustard leaves, and honey vinaigrette, it has a job.

    A cave, a garden, an open pass

    The room keeps the kitchen visible. Warm wood, soft light, counter seating, and a darker dining room give Little Bear its bear-cave mood, while the garden outside loosens the edge of the space. The design by The Lab Saigon uses shadow and earth-toned material rather than polish, which suits a restaurant built for small plates, conversation, and the occasional flare of the open kitchen.

    Service stays upscale casual, close enough to read the table without turning the meal into ceremony. The noise sits at conversation level, which matters when the food moves in quick contrasts: cold cuttlefish against stracciatella, grilled cockles against butter, clams against chrysanthemum. The room does not need to announce the craft. It keeps the bench in view.

    The plate to hold in memory

    Little Bear is still a young room, and its future will be measured less by awards than by how its dishes settle into habit for the people who return. For now, the dish that carries the house most clearly is the Cuttlefish Noodle with Stracciatella.
