It is drawn from the condition of the fruit, then carried through the cellar with restraint.

His role here is stated plainly: cellar master and winemaker. Site and style stay in conversation. Balance, texture, and fruit legibility matter as much as varietal name. At Meerendal, that means Pinotage, Sauvignon Blanc, Chardonnay, Pinot Noir, Cabernet Sauvignon, and Merlot do not sit as a checklist; they give Smit different ways to hold Durbanville’s cooling influence in still red, still white, and sparkling wine.

Pinotage from old bush vines

The estate’s most specific material fact is Pinotage from 1955 bush vines. That date gives the wine a fixed point in the ground, older than fashion and resistant to easy reinvention. In the cellar, the brief is not to overwrite that material but to move it cleanly from harvest to glass, keeping structure, concentration, and fruit in proportion. Meerendal works as a small estate with an organic production philosophy, so the method begins before the fruit reaches the cellar door.

That contrast matters.
