Crispy fried chicken skin meets shrimp mousse under Homan Tsui, Chef at MGM MACAU on Macau Peninsula, Macau, Macau, where his Chinese kitchens depend on timing more than display. Tsui serves as Executive Chef – Chinese at the hotel, with Imperial Court as his main working ground since 2018 and Il Sogno also inside the range of rooms he oversees. The position asks for a particular kind of authority: not the intimacy of one small pass, but the ability to keep proportion, aroma, and texture steady across a large house.

His clearest reference is Lingnan cuisine, and the discipline suits the property. At MGM MACAU, the kitchen language is formal without becoming stiff: stir-fried lobster meat with choy sum kept direct, braised partridge porridge with bird's nest and Yunnan ham held in the structure of the bowl, baked butterfly puffs with lava mango allowed a lighter register. Tsui's work has also been recognized with Black Pearl Restaurant Guide One-diamond in 2023. Awards do not cook the food. Repetition does.

A Chinese program inside a very large house

MGM MACAU contains 590 rooms and a dining program broad enough to include French cooking, Cantonese dining, international buffets, Japanese sushi, pastry, and the quieter logistics of in-room service. Tsui's role sits inside that scale. The craft problem is not variety for its own sake; it is keeping a regional Chinese vocabulary legible when the house around it moves at hotel volume.

Imperial Court gives that work its sharpest frame. The kitchen is measured by contrast: crunch against savor, freshness against aromatic lift, richness held back from heaviness. Marinated razor clam with sand ginger depends on that kind of restraint, as much about the cut and seasoning as about the ingredient. In a hotel with multiple restaurants and bars, Tsui's Chinese program has to read from the plate rather than the room. Texture becomes the signature, and control becomes the method.

The house beneath the glass dome

The house itself is built for scale, with a glass exterior facing the South China Sea and the Grande Praça set beneath a glass dome. Marble floors, vibrant decoration, and full-length windows give the public spaces their polish, while the mood stays lively rather than hushed. The POLY MGM MUSEUM adds another register inside the property, a cultural room of nearly 2,000 square meters built to Chinese national standards for Grade-One relics.

That breadth matters because Tsui's food is not made in isolation. It moves through a waterfront hotel where guests pass from retail to dining to art to the floor, and the kitchen still has to land the same gesture each service. The close attention is in the handling: chicken skin kept crisp, porridge kept coherent, lobster kept clean against choy sum. Homan Tsui's porridge with Yunnan ham remains.
