Vineyards, olive groves, and the hospitality life of the house now surround it. Clarity rather than ornament is the register: texture, temperature, and proportion given enough space to register. That is a useful temperament in a kitchen where Mediterranean fish, lake produce, pasta, beef, truffle, estate oil, and a serious wine program all meet at the pass.

    The cooking here works through tasting menus and à la carte, with the table taking the same menu together. Oseleta’s one Michelin star, first earned in 2013 and carried in the guide into 2026, rests on high-quality cooking rather than theatrical excess. The menu gives the method its measurements: Iberian lamb shoulder braised with 15 oriental spices; Alpine char cooked in oil with saor sauce, pine nuts, smoked potatoes, and raspberry gel; agnolotto filled with guinea fowl alla cacciatora, foie gras sauce, aged balsamic, and Monte Veronese cheese.

Monograno Felicetti linguine comes with broccoli cream, lake sardine, bergamot, and confit tomato, a dish that folds Lake Garda into a northern Italian grain line. Fusillone my way is the named signature, a plate with enough staying power to sit beside the restaurant’s broader seafood and Mediterranean register, and the live pasta flaming that finishes some courses has to be timed against a room that may still be seating late arrivals. The countryside is close enough to shape the menu: olive groves, Bardolino hills, Lake Garda’s mild air, and the estate’s own bottles all sit within the same conversation.

    That setting could easily become costume. The better work here is quieter. The pass has to hold the villa’s long history, the winery’s agricultural scale, and a preference for economy on the plate without letting any one of them dominate.
