The promise kept at the still

The cut is judged by nose and patience. Casey Overeem, winemaker at Overeem Distillery in Hobart, set the house standard in plain terms: “I made a promise that I would produce a whiskey that would stand alongside the best whiskies in the world.” At the bench, that kind of sentence matters because it gives the work a hard edge. It is not a mood. It asks every cask to answer for itself.

Jane Sawford, winemaker here, brings a different form of continuity to the same room. Her earlier Overeem work ran from 2007–2014, when she was co-founder and distiller, before roles at Lark Distillery Pty Ltd from 2014–2016 and later at Sawford Distillery and White Label Distillery kept her inside Tasmanian whisky from several angles. Sawford has described the return to Overeem as less a new chapter than a recovery of work that never left the hand. “We never really let it go,” she has said. “It’s still our favourite whisky.”

Wood, time, and a restrained hand

The clearest published markers of the Overeem method sit in the bottles associated with Casey Overeem and Jane Sawford: PX Cask Matured, Overeem 12 Year Old Bourbon Cask, Overeem Single Malt Whisky, and the 20th Anniversary Pedro Ximénez Release. Those names do not give away mash bills, cut points, still configuration, or barrel-entry strength. They do, however, keep the emphasis where this house has placed it publicly, on maturation, cask influence, age, and balance.

Sawford’s line from her father remains the useful discipline: “Dad always said that he wanted his spirit to taste like whisky and not oak.” It is a small sentence with a large consequence. In the still house, oak can flatter too quickly; time can become a disguise if the maker lets wood speak over spirit. The Overeem register, as described by the makers tied to it, is built around holding that line. PX gives richness. Bourbon cask gives shape. The job is not to let either become the point.

The still house without performance

The room at Overeem Distillery is best understood through the decisions its makers have been willing to state. Casey Overeem speaks in benchmarks. Jane Sawford speaks in attachment, return, and flavour memory. Between them, the place reads as a working distillery rather than a stage set for whisky language. The back of the house is where the promise has to survive contact with spirit, wood, and waiting.

Hobart gives the address, but the craft here is not carried by scenery. It sits in the cellar logic of what to keep, what to bottle, and what to leave alone. A cask can be pushed toward sweetness, polish, or weight. The harder gesture is restraint. Overeem’s public vocabulary keeps coming back to that point, with PX Cask Matured and Overeem 12 Year Old Bourbon Cask naming wood while refusing to let wood become the whole story.
