    From the still room to the house memory

    Patrick Maguire turns spirit into explanation as winemaker at Sullivans Cove Distillery in Hobart, where his work has moved between production, ownership and public representation. He entered distilling in 1999 at Tasmania Distillery, in a Tasmanian whisky scene that still needed to be argued into view.     His own account of those early conditions is plain. “As far as the industry goes, there wasn’t one, and it was very difficult getting people to even show an interest.” That sentence belongs to the bench as much as to the market.
